 Chocolate Avocado Smoothie

I love this smoothie because I feel like I’m cheating, but everything in it is extremely healthy. When I’m craving a chocolate shake, I make this instead. This smoothie has become one of my go to breakfasts since it’s quick, filling, and I can get it ready the night before.

As I’m typing this, I’m having trouble focusing on this and instead thinking of making it again. Avocados…check, bananas…check, ice cubes…double check! This will keep in the refrigerator for a couple of days. I like to make it on Sunday nights as it’ll be breakfast for both Monday and Tuesday.

Everything you could possibly want is in this smoothie. Lots of vitamins and minerals from the banana, healthy fats from the avocados, calcium from the milk, and of course your daily dose of chocolate with the cocoa powder. Not to mention that cocoa powder itself is full of awesome antioxidants. Yeah…I think I have just convinced myself to make this again and you should too!

French Vanilla Pudding Cookies

I’ve heard of a trick to getting super soft cookies every time, but have never had a chance to try it until this past year. If you haven’t tried this already, what I may tell you will change everything you’ve ever known about cookies…well it might not, but it should rock your world. Next time you’re whipping up a batch of cookies, add a pudding mix to the batter!

These cookies stay soft for days! And I’m talking about like, you make a fresh batch on Sunday and on Thursday they’re so soft people think you made them the day before. I think another key is the size. I’ve tried making these a bit on the smaller scale, and they tended to dry out within a couple of days. With larger batches like these, we actually kept them on the cooling rack and they didn’t dry out until about after one week (in which case we just had to eat the rest of them…luckily for us, we had just about finished them off).

I chose a french vanilla pudding flavor to go with the dark chocolate morsels. These cookies are on the sweeter side, and I would not recommend using milk chocolate chips. I prefer to temper the sugar in the batter and pudding mixture with dark chocolate chips. My boyfriend absolutely loves these and always requests me to make them. I don’t think I’ve ever bought so much pudding before! Try out these simple cookies for yourself and let me know what you think!

Whisky Burger

You know what season we just entered? Burger season! Do you know what I thought I couldn’t have living in an apartment?? Homemade grilled burgers!! Well, I just found this cast iron grill skillet and the burgers tasted just like they were cooked outside. Let me tell you, these burgers are amazing!

The burgers are incredibly juicy and flavorful! I may never order burgers when I go out again. The oats really help to lock in the juices and keep the burger from drying out. I also added a little bit of whisky to the meat which just added a nice subtle flavor.

Now that I have this skillet, I can’t wait to try out other grilling ideas indoors! Maybe there’ll be some nice BBQ chicken breasts in the future, but for now all I’m seeing are burgers. I topped this with a tangy BBQ sauce, butter lettuce, and Havarti cheese. You can use your favorite cheese, but the nice creamy, mellow flavor of Havarti just pushed this over the top. It’s a good thing I picked up a block from Costco because now I have an excuse to use it in everything!

Huevos Rancheros

I think my doctor’s going to yell at me for all the eggs I’ve been eating lately, but I just can’t help it. I love eggs. I think I’ve found my new go to breakfast…or dinner…or make that lunch. I know huevos rancheros is normally a breakfast, but we just ate this for dinner the other day and almost had it again last night (luckily for my cholesterol, my boyfriend convinced me that other food does exist so we decided on something else).

You could use this as an easy father’s day breakfast as it’s very easy to adjust the number of servings. All you do is fry up more tortillas and eggs! You could even set out a toppings bar. That way people could add as much or as little as they want of all sorts of toppings.

While my egg motto is the runnier the better, this would be one dish in which you could fully cook the yolk or even add scrambled eggs. The beans are like the glue of the whole dish and should not be left out. If you’re not crazy about black beans, refried beans would work just as well. They make it incredibly filling, and after two tortillas I am done.

Guinness Cupcakes

Father’s Day is coming up soon, and I almost never know what to get my dad. He’s one of the hardest people to shop for, which is fine for me, since I usually just end up baking some cookies as my gift. I wanted to try something a little different this year, so I’ve been playing with a few ideas.

One of these ideas is Guinness cupcakes because what says dad better than beer? I don’t believe my dad is particularly fond of Guinness, but I thought it would be fun to give these a go. Most people pair the cupcake with a Bailey’s frosting, but having one alcoholic beverage was enough for me. I found a vanilla buttercream frosting that added almond extract and it went amazing with the cupcakes.

These cupcakes are easy to put together, but I will say I was a bit worried when I added the beer to the butter/sugar mixture. It began to curdle a bit, but that’s normal and to be expected. I think many dads would enjoy this recipe. The Guinness creates a rich dark chocolate flavor while the frosting adds a nice complementing sweetness.
