This yoga teacher training has taken any free time that I might have once had, but I love it. I leave each class feeling like I’m on the right path. Then I get home and have a small panic attack at how much there is to remember. We’re meeting on Thursdays, the weekends, and some Tuesdays and there’s a lot to cover each time. You never really understand how much goes into a class until you learn how to teach it! Right now I’m still in the robot stage where I’m just spouting out the poses by the book. Hopefully soon I’ll feel more comfortable to bring in some personality.

It’s hard to believe that we’re going to cover everything in just ten weeks. Sometimes, it feels like the end is never in sight and then the next moment it’s coming up too soon. I still get terrified at the thought of teaching to a room full of students, but teaching the others in the program is helping to tackle this fear.

However, it’s left not much time to think of something to make for this week, so I thought it would be a great time to focus on some of my favorite recipes! There’s nothing better than revisiting an old classic, and I chose four of just some of the amazing things I’ve made over the past year.

1) I have to go with the Snickers Trifle. This was definitely everything I could have wanted in a birthday dessert. Layers of chocolate cake, peanut butter pudding, and caramel, what more could you want?

2) Almond pretzel bark. This is a crazy quick amazing snack that really helps to tackle those chocolate cravings.

3) Chocolate chip cookie cups were the hit of the office when I brought them in! These are like a gooey chocolate chip cookie but thick enough to hold some frosting.

4) I couldn’t not add a savory dish to the list. This zucchini sandwich is one of my childhood favorites and perfect any time of the year!

Has the time been flying by or what! I didn’t even realize that the 1st year anniversary for Upside Down Pear happened. Time has really gotten away from me. As a treat to myself/break from the kitchen, I wanted to share both my three favorite dishes from over the past year and the top three dishes you guys enjoyed. Some of these are from the very beginning of the year, so don’t be dissuaded by the bad pictures!

Whipped Cream by @UpsideDownPear

Whipped Cream is one that I still dream about, it’s just that good. This recipe is crazy light and fluffy and everything you’d want out of a whipped cream. Plus you can put it on just about everything!

Huevos Rancheros by @UpsideDownPear

Huevos Rancheros has been probably the one breakfast/dinner that I’ve made the most often. It’s really that addicting. There’s something about the eggs and the beans topped with salsa and sour cream to curb any Mexican craving.

Shepherd’s Pie might not be the quickest, but it’s definitely got that comfort food goodness going on. You’ve got amazing mashed potatoes loaded on top of veggies, meat, and gravy. It’s drool worthy.

Three Nut Energy Bites are also one of my favorite snacks. They come together quickly and easily, plus it feels like you’re cheating but everything is super good for you. I’ve definitely used these for both breakfast and an afternoon snack.

Upside Down Pear Cake by @UpsideDownPear

Upside Down Pear Cake is the very first recipe on this site and it's a favorite for a reason. It’s a buttermilk cake topped with sweet caramelized pear slices. If you haven't tried it yet, you should! It’ll easily become a family favorite in your house as well.

Pineapple Mimosa by @UpsideDownPear

Pineapple Mimosas are a great twist on the classic and fun way to celebrate. We rang in the new year with these, but there’s no reason to stop there!

Going through this list has really brought back some memories for me, and it’s amazing how much we’ve been able to accomplish over the course of one year. Thank you so much for your support, and I hope that you’ve found some new classics as well. I look forward to bringing you many more tasty treats over the next year!
