Chicken Pesto Chicken

Do you ever have one of those moments where as soon as you do something, you know you shouldn’t have? Like…oh I think I’ll send this picture out, and then it turns out that you sent it to the wrong person or something? Yeah, I’m kind of having one of those days. Nothing major or anything that will ruin things for life. Just little things that you’re like…why!? Why did I decide to do that…now I look dumb. Oh well. I guess it’s live and learn right?

One thing I don’t regret is this chicken and pesto dinner! It’s crazy easy so even I can’t screw it up. You can use your favorite pesto (or homemade version if you have one). I haven’t dabbled into making my own pesto sauce yet, so I get mine from Costco. Have I mentioned that I love Costco yet? I’m pretty sure you’ve heard me talk about all sorts of things I pick up there. They have everything, and I highly recommend their pesto sauce.

I decided to boil the chicken because it just makes everything easier and you don’t have to worry about overcooking as much. Plus I really really really hate cutting raw chicken. It’s just the worst and it’s so messy and I’m at the point that I’ll do pretty much anything to avoid it. So boiling it is. Boil and then cube, toss, and serve. Dinner in minutes! This is great for those weekdays when you feel that you just need to catch a break. Plus, you can make up a big batch ahead of time, and heat up into smaller portions for later. We do that, and it makes for quick lunches as well.

Chicken Pesto Pasta

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Makes: 4 servings
1 pound of chicken
8 ounces of pasta
1 cup of pesto
1) Add the chicken breast to a pot, add water to cover and then boil for 20 minutes.
2) While the chicken is boiling, fill another pot with water and bring to a boil. Once boiling, add in the pasta and cook according to the directions on the box.
3) When the chicken is done, cut into cubes. Make sure the chicken is fully cooked before cubing. A good check is to cut a breast in half. If it's still pink in the middle, place back in the pot and keep boiling.
4) When the pasta is done, drain and place back into the pot. Add the cubed chicken and pesto sauce. Toss until everything is coated and serve.
