This is one of my all-time favorite dinners (and it’s not even Asian!). Mexican is near and dear to my heart, and I could eat this just about every day. Best part, it can be as simple as three ingredients, but it’s a bit better when you add a few others. Chicken and salsa is almost like nachos, but with a lot less work involved and a lot of flavor.
I’ve started going to yoga classes again (thanks first time student packages) so I’ve actually had less time at home during the week than I used to and by the time I get home I am starving! I made a big batch of these at the beginning of the week and have been enjoying it over a couple of days. When I’m in a rush, I skip the lettuce, but if you have the time the lettuce really does add a nice crunch.
You totally need to make this for dinner! I’m sure you’ll be just as hooked as I am after one bit. Is it wrong that I went through two bags of tortilla chips within about four days? Doesn’t matter…dinner’s ready in less than 30 minutes and that’s really what this is all about.
