Are you always wondering what to do to with all the leftovers? I know I’m always struggling with that. While I love turkey on Thanksgiving, there’s only so many times I can eat the same dish over and over again before it just becomes unappealing. Luckily, this year we got creative.
We used ciabatta bread for rolls, and actually had some leftover. After one look, I knew they’d be perfect for this sandwich! We toasted the bread up, and while that was toasting, heated the turkey and stuffing. We topped this off with a bit of this cranberry sauce (though I suspect gravy would work just as well) and dug in! It was one of the best sandwiches I’ve ever eaten.
I actually was inspired by Nordstrom’s café. They have a cranberry and turkey sandwich that my grandma swears reminds her of Thanksgiving. So, when I saw everything that we had leftover, I knew immediately that I needed to try and recreate it. This sandwich is the perfect way to combine all that we love about Thanksgiving, without the feeling of Thanksgiving overload!
