Oops! I totally meant for these to go up last Wednesday but they kind of got pushed to the back burner. This is what I made on Valentine’s Day and they brought a smile to my face. I knew that I wanted to make a red cookie, but I was initially thinking a cherry flavored cookie. Do you know how hard it is to find cherry extract? Crazy hard, and I still haven’t found it in any of my local grocery stores. As soon as I found the strawberry extract, I knew it was meant to be.
These are fun and a bit different than your run of the mill chocolate chip cookies. I mean, how often do you have strawberry cookies at any time much less with chocolate!! Plus how doubly perfect was it that it’s strawberry and chocolate on Valentie’s Day. Almost like a chocolate covered strawberry ( plus I did dip them in white chocolate on top of it all). You don’t have to add the red food coloring, but I thought it gave it a nice coloring.
The strawberry extract was pretty light on the flavor, so I ended up using about twice as much as I planned on. I’m not sure if this will vary by brand, so you might want to test the batter before adding any dry ingredients after you put in about half the amount and see if you’d like to add in more or not.
As far as my yoga goes, I met with a friend over the weekend and we both talked about the different things we went through for our training. We went to different places but saw a lot of common threads between the two programs. It really helped me to think about what I want to do with it and I think I’m going to look into creating an LLC and looking at placed to sub at over the weekend. It’s a bit nerve-wracking thinking of teaching a full hour class, but the only way to get better at it is to do it. Time for me to make the next move.Add a comment
It was definitely fall outside today. The air has turned to the cooler side and has a nice crispness to it. I haven’t made it to a cider mill yet (mostly due to all my time being spent on yoga) but I can’t wait to get to one during the month of October. There’s almost nothing better than a fresh cider mill donut.
You know what’s also amazing in the fall time!? Carrot cake! There’s something about the slightly heavy, yet amazing amount of spices that’s in carrot cake to make it a fall time favorite. I know that some people associate carrot cake with Easter/spring, but really all that cinnamon, nutmeg, and all spice belong to the fall/winter.
I didn’t feel like making a cake though. That’s just too easy…and it’s kind of difficult to bring to work. These cookies are super moist and are almost like a cinnamon oatmeal cookie with a hint of carrot. They are perfect to pair with the pumpkin spice latte I’m sure everyone’s getting this time of year. Especially with the cream cheese frosting on top.
Other than grating the carrots, these actually come together pretty quickly. Just think of it as building arm muscles when you’re prepping those carrots. It helps make the time go by! You definitely need to go pick up a couple of carrots and make these this weekend.Add a comment
San Diego was incredible and so much fun! It was awesome hanging out on the beach with my family, but now it’s time to go back to work. I wanted to make something for my new coworkers as a kind of “nice to meet you” gesture, so I decided to go with these chocolate chip cookie cups. I hope they go over well…I mean who doesn’t love a good chocolate chip cookie. Then I topped off the cups with some frosting and sprinkled some coarse sugar on top for some sparkle.
We flew into Michigan on Sunday, and I decided to bake these on Monday to take into work on Tuesday. Totally forgot that I didn’t have enough frosting to cover enough cups to take with me, so now I need to make a run to the store to pick up another tub. So now I’ve got a double batch sitting and taunting me on my counter until I’m able to finish them. The cookies cups themselves are amazing…they’re just prettier when finished. Definitely need to bring these in on Wednesday or there might not be enough to bring.
These would also be perfect as a birthday cake replacement. My brother doesn’t like cake too much, but he does love a good cookie. Next year, I’m thinking of making these for him (his birthday’s in June so he’ll just have to wait). Or I might bring them with me to Christmas gatherings. I’ll just top them with red and green sprinkles to make them more festive. If you’re hosting a Halloween party (and I can’t believe how soon that’s coming up), these would be perfect with along the cider and pumpkin goodies. With their soft center and crispy outside, no one will be able to resist!

I just started working at a new place last week, and the people there seem to be super nice. I was crazy nervous and a bit excited when I first started that I had a hard time eating breakfast. But I was able to eat dessert! I mean, it’s definitely time for a bit of celebrating. So I wanted to create another trifle that wasn’t quite as heavy (and a bit less work) than the last one I made. Since it’s been like 90 degrees here, I wanted something that still seemed a bit summery and fresh, so I decided to turn a strawberry shortcake into a trifle.
The pound cake isn’t homemade. One day, I’m sure I’ll make a pound cake, but I haven’t done that yet and like I said…I’m keeping it simple. So….unless you have a burning desire to make your own, using store bought is totally fine. I crumbled up a slice of cake, sliced upped some strawberries, and topped it off with vanilla pudding! Perfection if I do say so myself.
This really hits the spot when you want something quick, fun, fruity, and easy. It’s actually quite easy to make on a larger scale, so you could bring it to a party. It looks crazy gorgeous, and no one has to know how simple it was to put together. Tell them it took weeks and that you were lucky to have the time to put together such a wonderful dessert!Add a comment
I was walking around the grocery store when I came across a frosting flavor of peanut butter cookie dough and knew immediately that I needed to get it and put it on something. I wasn’t sure yet, but initially I was thinking about a batch of cupcakes. Then as I was watching t.v. it came to me. Chocolate chip frosting sandwiches. That’s what I needed to make with this crazy new frosting.
I’ve been in the mood for chocolate chip cookies lately. Not sure why other than it’s been a really really long time since I’ve made just a plain batch of them. Then I amped them up by smearing some frosting between two and sticking them together. It was AWESOME and super fun to eat. Little cookie sandwiches. I really liked the frosting that I picked up at the store since it wasn’t too sweet. By itself the frosting is a little on the bland side, but after adding it to the cookies the flavor really stands out.
These are just a tad addicting, so after this frosting is finished I’ll probably try to stay away from the baking isle for a while. Otherwise we might have a freezer full of these and nothing else!
