Egg Nog Pancakes

Christmas is finally upon us, and I'm still not sure I'm ready for it.  Not only have I been back in the states for just shy of two weeks, I'm also recovering (quite nicely I might add) from an eye injury.  I went to my first street hockey meet up to have some fun, and got hit in the face from the ball.  I was having a lot of fun and can't wait to return.  Bren's been going for a couple of weeks, so I decided to join him and then my face wanted to make friends with the ball.  It was more of a fight and my face lost, but enough about that and more about these delicious pancakes!!

Egg Nog Pancakes

We swapped the milk for egg nog and added a bit more cinnamon and nutmeg to the batter.  They turned out great!  If you're worried about them tasting more like a dessert than a breakfast, fear not!  They have a hint of egg nog, but don't give you that sweet tooth ache.  They're actually just shy of the sweet side.  We toppd them off with whipped cream and butter rather than maple syrup.

In the spirit of the holidays, I also topped mine with sprinkles (but that's totally optional).  These pancakes are similar to our other pancakes and a bit on the heavy side.  Two pancakes and I was stuffed!  Keep the holidays alive after Christmas, and make these on New Year's Eve as well!

Egg Nog Pancakes

Prep Time: 15 minutes Cook Time: 45 minutes Total Time: 1 hour
Makes: 6 panckaes
 
Ingredients:
1 cup of white whole wheat flour
1 tablespoon of sugar
2 teaspoons of baking powder
1/4 teaspoon of salt
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1 cup of egg nog
1 tablespoon of vanilla
1 egg
2 tablespoons of oil
 
Directions:
1) In a medium sized mixing bowl, combine all the dry ingredients.
2) In a separate bowl, combine all the liquid ingredients including the egg
3) Carefully pour the liquid mixture into the dry ingredients and mix until all is combined. Be careful not to overmix. Some lumps are ok.
4) In a pan over medium heat, scoop out 1/4 cup of the batter and cook for about 3 minutes on each side. Top with your favorite toppings and enjoy!
