I wanted to make something with the remaining apples and pears that I had, so I thought what better than to caramelize them and add them to some delicious french toast. I needed the perfect bread for this since we almost never make french toast, and I knew just where to get it. Japanese bakeries always have the best white bread. They’re perfectly square, have a nice crust, and are just supreme to other types of breads. We bought ours at the local Asian mart and kept it for a couple of days. It’s best to use slightly stale bread for french toast since it won’t fall apart when you dip it in the egg batter. If you don’t have an Asian mart near you, any day old bread will work.
To our egg batter, we added cinnamon and cardamom. These spices paired very well with the apples and pears, and I must say it was one of the nicest breakfasts we’ve had in a while (and it was definitely a nice change from all the eggs we’ve been eating….though since there’s an egg batter does that still mean we had eggs for breakfast?)
This is a pretty simple recipe, but it looks super fancy. If you’re looking to impress anyone, this should definitely be on your list of things to whip up! Add a touch of whipped cream and no one will be able to resist.
If you have any leftover apples and pears (which we did), they make a great topping to ice cream!
French Toast with Caramelized Pears and Apples

Makes: 4 servings
For the caramelized pears and apples: 2 tablespoons of butter 1 tablespoon of water 1/2 cup of brown sugar 1 pear, sliced 2 small apples, sliced
For the french toast: 4 eggs 1/2 cup of milk 2 teaspoons of vanilla 2 teaspoons of cinnamon 1/4 teaspoon of cardamom 8 slices of day old bread
1) In a saucepan over low to medium heat, melt the butter. Once the butter is melted, add in the water and sugar and stir until the mixture is smooth. 2) Add in the pears and apples. Turn on low and keep over heat while french toast is cooking. Remember to stir it once and a while. 3) Begin to heat a pan on a separate burner. While the pan in heating up, take a bowl big enough to dip the bread in and scramble the eggs, milk, and spices. 4) Coat the slice of bread on each side with the egg mixture and place in the pan. Cook for about 2 minutes on each side. 5) Once all the bread is cooked, top with the caramelized pears and apples.
